Indulge in the Fiery Essence of Sambal Nusantara at Padma Hotel Bandung

Padma Hotel Bandung is delighted to present Sambal Nusantara, an exquisite culinary journey that celebrates the bold and vibrant flavors of Indonesian sambal (chili sauce). This unique event is led by the renowned chef Setyo “Theo” Widharto, who will demonstrate his exceptional mastery of Indonesian cuisine, guiding guests through an exploration of intense and authentic flavors.

Enhancing this extraordinary experience, sommelier Ni Nyoman “Widya” Kertawidyawati will expertly curate a selection of five premium wines, allowing guests to discover the perfect pairings for each dish. Together, chef Theo and sommelier Widya promise an unforgettable evening of culinary excellence and sophisticated indulgence.

Before the dinner commences, guests are invited to a 30-minute interactive session designed to immerse them in the intricate world of flavors and wines. This engaging prelude sets the stage for an extraordinary dining experience.

During this session, guests will be provided with a selection of five wines, each boasting distinct characteristics, allowing for a nuanced exploration of taste. Accompanying the wines will be a plate featuring a fundamental flavor: salt, sugar, and lime, which will serve as the building blocks for understanding the complexity of the pairings.

Additionally, guests will receive a plate of essential sambal sauces, including andaliman, sambal ireng and sambal bawang, offering a spectrum of Indonesian spice profiles. To complement these, a plate of basic proteins, pan-fried salt and pepper, slices of fish, chicken and beef, will be available, enabling guests to experiment with different combinations and discover their personal preferences.

Afterward, guests may indulge in a curated three-course dinner set menu, featuring ikan andaliman, a choice of either bebek sambel ireng or daging asap sambal bawang and pisang roa, crafted by chef Theo. Whereas the wines from the interactive session will remain on the table, allowing you to continue your pairing experience throughout the evening.
